White Pinot Noir, Reserve 2017
This Pinot Noir is made in the “Blanc de Noirs” style, allowing a white wine to be made from a red grape. Picked early to keep a lively acidity, entire clusters are loaded directly into the press and very gently pressed to avoid any color pickup from the skins. The resulting white juice began fermentation in a temperature controlled stainless steel tank, but was transferred to barrel to finish fermentation. Aging on the lees and regular stirring allows the wine to pick up body and mouthfeel, which is counterbalanced by the natural acidity, allowing for a crisp, refreshing finish.
Aroma – Meyer lemon, candied ginger, graham cracker crust, slight nuttiness
Palate – Soft on the palate with medium viscosity, gives way to lingering acidity on the finish.
