Cabernet Sauvignon has been a staple at Boeger Winery since the 1970's. This classic bordeaux varietal grows beautifully in the high elevation micro-climates of the El Dorado AVA where the winery is located. A blend of estate fruit grown from 2300-3000 foot elevation vineyards. Elegant and finely crafted, this Cabernet is an excellent compliment to any fine meal.

TASTING NOTES
Aroma – Black currant, black cherry, hints of bay leaf, almond extract and vanilla. Palate – Medium full body, fresh across palate with firm, structured tannins.

The majority of the grapes for this classically styled Cabernet Sauvignon are sourced from our Peek Vineyard. At 3,000 feet elevation, this vineyard provides excellent growing conditions for Cabernet, where brisk night temperatures help retain Cabernet’s notable acidity and typical varietal aromas. The remainder of the Cabernet grapes comes from our Estate Vineyard and contributes slightly softer tannins and more pronounced fruit aromas.
